How to Make a Cheese and Tomato Croissant

If you have ever been to Pret then you must be familiar with their cheese and tomato croissants! This recipe is the perfect copycat.

As the lockdown in London continues I have become quite partial with copycat recipes, and since Pret was one of my usual places for a quick snack, I knew I had to master some of their recipes.

These croissants are incredibly easy to assemble and literally only use four easily available ingredients.

I prefer to use a ready-rolled puff pastry, all I have to do it is cut it. However, if you prefer you can also buy a block of puff pastry and roll it out yourself. Just make sure it isn't too thick, about 4mm should be enough. I love the flakiness of puff pastry and how it can be used for anything from a meal to a super simple snack. If you love using puff pastry as much as I do, why not try my salmon wellingtons.

Folding these croissants correctly is the key thing when making these. You will need to fold the opposite corners together like in the images below.

For the cheese, I use Gouda as it is by far one of my favorite cheeses, especially when it comes to pastry and sandwiches. I but it in slices and have found that the Sainsbury's ones are the perfect size for this croissants. Essentially you want is about 1/2 inch of plain pastry on each side of your square, so if your cheese slices are too large you can just cut them down.

For this recipe I like to use salad tomatoes are they are firmer and easier to slice. Also, their sweet flavor goes perfectly with the tanginess of the gouda. You could also use cherry tomatoes, but make sure they are firm.

There are many fillings you can use in these little pastries. Cheese and tomato is a favorite of ours, but we also love some chorizo and smoked applewood. What fillings will you be trying?

Ingredients

  • 1 Sheet of ready rolled puff pastry
  • 6 Slices of Gouda Cheese
  • 3 Firm Tomatoes Sliced thinly
  • 1 Egg Beaten
  • Basil leaves to garnish

Instructions

  • Preheat the oven to 180degrees celcius

  • Cut the puff pastry into 6 equal squares

  • Put a slice of cheese the middle of each square

  • In a diagonal line add 3 tomato slices in the middle of the cheese

  • Fold over the top left corner and the bottom right corner and join them in the middle. Press them together with your fingers so that they stick*

  • Brush the exposed pastry with the beaten egg

  • Bake at 180 for 20 minutes

  • Garnish with fresh basil leaves and enjoy!
